Question: How do I work towards becoming a Director of Sales/Catering/Banquet Services? I am college student, and I've found my dream job and that is to plan large scale events. Now my major is Psychology and I'm doing a minor in management, so I feel I could put my degree to use in this position. However, I need to find a way to get myself into that catering/event planning environment and I can't decide which way would be best. Any suggestions?
Answer: If you can get a job in the even planning department of a large hotel or a casino.
If you can get on at a casino you will learn everything an event sales/planning staff would ever need to know anywhere. Vegas or Atlantic city are the largest but there are casinos all over the country - all of which hire at least a few people to work in this area.
Prospecting, sales, planning, decor, food - everything. High demand and high stress but it can also be a lot of fun.

Question: What is the real difference between Catering and banquet operations and food service production? I want to be a professional chef and I have all the "real" academic courses almost done for either of these but not any of the practical and before I apply to a program- I figured I should know what I'm doing.
I want to cater- but I I also want to work in a restaurant. It seems like Catering and banquet operations is my best bet - right?
Answer: Food service production refers to fast food "cookie cutter" food prep. Everything is the same, and is either preprocessed or made from "The Book" from which there can be no deviations. This is why a (insert name of fast food here) cheese burger tastes the same whether you buy it in Chicago, N.Y., or L.A.
Chain restaurants, fall into the same problem. Food is made to order from fresh ingredients, but it still must taste like the command recipe to which you were hired to cook like.
Single, independent, or "Designer Chain" restaurants can give you the format to cook the way you please, and if you feel the food needs "tweaking" you can make the change yourself with out permission from the Corporate Headquarters.

Catering can be a blessing and a curse, but mostly it will make you curse when you think no one is listening. Especially the weddings! The first person I ban from my kitchens is the wedding planner, if she is related to the bride. Nobody needs the stress of a hysterical planner while trying to make 100 dinners that are all the same.

Answer: Finding workers is definitely a challenge. You need people who are reliable but flexible and are ok with lots of hours one week and very few or none on others. Some days you may need 30 people and the next only 2. Miniatures are still a growing catering trend, people like to be able to have a few bites of a lot of different things.

I can't find any comparable jobs in salary guides, and any posted jobs for these positions always have "salary depending on experience". Any ideas?

Question: What is a good Banquet location around the beach, OC, La county for a party of 60-70? I'm looking for a banquet location with a nice view, preferably an ocean view but I'm going for anything right now. This is for a celebration for the alumni going onto college. I'm not sure what catering service to go with but I have a professional photographer and DJ so far. Is there anything that would make the banquet more exciting?

The DJ and photog will make things fun - as long as you have a good DJ, it will liven things up - don't have games and stuff - it's never as fun as you think it will be :)
Question: How much should our banquet hall charge for A.V. Rentals? We provide catering services for many events. We recently purchased a large LCD television & wireless microphone system. To help re-coup our cost we will have to charge a rental fee to use them. Any ideas on how much we should charge per item per event? Thanks in advance!
Answer: They typical rental rate is 500% of the daily expense. That is, if you spent $1000.00 on the equipment, and you expect the equipment to last for a full year, you divide that amount by the 365 days in the year ($2.73 per thousand) times 5. Or $13.70 per day. (This assumes that you expect the equipment to be used daily, for a year.) If it has a shorter lifespan (a bulb in a projector may only have a 100-hour life, for instance.) I'd round up to $14.95 for $1,000.00 worth of video equipment.
Question: Banquet hall contract not signed, still valid? The banquet hall took a deposit to hold a date, but I never signed the contract that they faxed to me. Is the contract binding, and can I get my deposit back? (the wedding is a year away, I might want to switch location due to cost)

Answer: All a written contract does is clarify the terms for each party, usually in the event of a dispute. The signed contract is not the most important thing -- the exchange of money was.
Even if you never signed the contract, did you at least keep it? The rules governing deposits will be in it. My guess is you're free to cancel the reservation, but your deposit is gone, as is the usual nature of deposits. It was to save the date for you, which they've done.
